Fresh tomato salad with smashed avocado on toast

Sometimes we have a need for a quick and healthy lunch and this has to be one of my favourites. It’s super simple to make and the taste is off the charts!!

I cheated a bit and purchased a fresh loaf from my local store - it had cranberries and cashew nuts in it so it was quite sweet. Smashed some avocado with a fork to spread on top, and then topped with my tomato salad.

Ingredients for the tomato salad:

  • Really sweet tomatoes, chopped in half

  • A large handful of fresh coriander/cilantro

  • A drizzle of extra virgin olive oil

  • A good sprinkling of rock salt

Mix it all together and add to your toast - it’s really that simple! You can also add a fresh squeeze of lemon or lime if you wished too. Enjoy!
