Avocado salad

I love avocados, so much so that my friend got me an avocado cake for my birthday last year. If we really are what we eat, I’m an avocado!

I often eat it on it’s own but sometimes it’s nice to have it as part of a zesty salad to have alongside some fresh fish. I tend to serve this with salmon but I can imagine it would be delicious with some marinated chicken too.

Ingredients:

  • 1 small red onion

  • 1 large avocado

  • 1 large or 2 small tomatoes

  • 1 clove of garlic

  • A handful of fresh coriander/cilantro

  • 1 lime (for juicing)

  • Salt and pepper

  • Olive oil (optional)

  • Fresh chilli (optional)

Method:

Chop your onion however you like it, I prefer mine either in thin slices or chunky diced.

Wash your tomato, scoop your avocado out of its skin, remove the stone and chop both into bite size chunks and add to the onion

Crush your glove of garlic (or finely chop if you prefer) and add to the mixture

Chop your fresh parsley and add to the bowl

Squeeze over the juice of 1 lime as well as adding some salt and pepper to taste

Add your drizzle of olive oil and fresh chilli if you’re using

Mix well and serve!
